2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/2 teaspoon black pepper

1 large egg

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil (for drizzling)

Fresh basil leaves (for garnish, optional)

Prep the Zucchini: In a large bowl, mix the grated zucchinis with the salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zoodles in a clean kitchen towel to remove as much water as possible.

    Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, garlic powder, oregano, and black pepper until well combined.

      Combine Ingredients: Add the squeezed zucchini to the dry mixture, followed by the egg, mozzarella cheese, and half of the Parmesan cheese. Stir until a cohesive dough forms.

        Prepare the Baking Sheet: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper, ensuring it is well greased to prevent sticking.

          Shape the Breadsticks: Transfer the dough onto the prepared baking sheet. Using your hands, shape it into a rectangular or square shape, about 1/2 inch thick.
