Ingredients

2 medium zucchinis, grated

1 teaspoon salt

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (about 4-5 slices)

1/3 cup all-purpose flour

2 large eggs, beaten

2 green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

Olive oil (for frying)

Instructions

Prep the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible. This step is crucial to ensure crispy fritters.

Mix Ingredients: In a large mixing bowl, combine the drained zucchini, shredded cheddar cheese, crumbled bacon, flour, beaten eggs, green onions, garlic powder, onion powder, and black pepper. Stir until all ingredients are well incorporated and form a cohesive mixture.

Form Patties: Using your hands, take about a tablespoon of the mixture and shape it into small fritter patties. Repeat this step until all the mixture is formed into patties. You should have about 12-15 fritters, depending on size.

Heat the Oil: In a large skillet, heat a couple of tablespoons of olive oil over medium heat. Make sure the oil is hot but not smoking.

Fry the Fritters: Carefully place a few fritters in the skillet, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side, or until golden brown and crispy. Remove from the skillet and place them on a paper towel-lined plate to absorb any excess oil.

Serve and Enjoy: Serve the cheesy zucchini bacon fritters warm, garnished with additional chopped green onions or a dollop of sour cream or yogurt if desired. They make a great appetizer, snack, or side dish!
