Cheesy Tuna Noodle Casserole

8 oz egg noodles

1 can (12 oz) chunk light tuna in water, drained

1 can (10.5 oz) cream of mushroom soup

1 cup milk

1 cup frozen peas and carrots

1 cup shredded cheddar cheese, plus extra for topping

1/2 cup breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1/2 tsp black pepper

Salt to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Cook the Noodles: In a large pot of boiling salted water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

      Prepare the Sauce: In a large mixing bowl, combine the cream of mushroom soup, milk, garlic powder, onion powder, black pepper, and salt. Whisk until smooth and well blended.

        Mix Ingredients: Add the drained tuna, frozen peas and carrots, and 1 cup of shredded cheddar cheese to the soup mixture. Stir to combine, then gently fold in the cooked egg noodles until everything is coated.

          Assemble the Casserole: Grease a 9x13 inch baking dish with olive oil. Pour the noodle mixture into the dish, spreading evenly.

            Top with Cheese and Breadcrumbs: Sprinkle the remaining cheddar cheese over the top of the casserole. In a small bowl, combine breadcrumbs with a drizzle of olive oil, then sprinkle this mixture evenly over the cheese layer.

              Bake: Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Once baked, remove from the oven and let it sit for 5 minutes. Garnish with chopped fresh parsley before serving.
