For the Meatballs:

1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon Italian seasoning

1 cup mozzarella cheese, cut into small cubes

For the Sauce:

2 cups marinara sauce (store-bought or homemade)

For Assembly:

4 large sub rolls

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish (optional)

Olive oil for drizzle (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Make the Meatball Mixture: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, chopped parsley, egg, minced garlic, onion powder, salt, black pepper, and Italian seasoning. Mix until just combined.

      Stuff the Meatballs: Take a small portion of the meat mixture and flatten it in your palm. Place a cube of mozzarella cheese in the center and enclose the cheese with the meat, rolling it into a ball. Repeat with the remaining meat mixture until you have about 12 meatballs.

        Brown the Meatballs: In a large skillet over medium-high heat, add a drizzle of olive oil. Once hot, add the meatballs and cook until they are browned on all sides (about 5-7 minutes). They don’t need to be fully cooked through at this stage as they will finish cooking in the sauce later.

          Simmer in Marinara Sauce: After browning, transfer the meatballs into a baking dish and cover them with marinara sauce. Ensure they are coated well. Bake in the preheated oven for 20-25 minutes until the meatballs are cooked through and the sauce is bubbly.

            Prepare the Sub Rolls: While the meatballs bake, slice the sub rolls lengthwise without cutting all the way through. Lightly toast them in the oven for about 5 minutes or until they are just crispy.

              Assemble the Subs: Remove the meatballs from the oven. Spoon several meatballs onto each sub roll, ensuring each has cheese and sauce. Top with shredded mozzarella cheese.

                Melt the Cheese: Return the assembled subs to the oven for an additional 5 minutes or until the cheese is melted and golden.

                  Garnish: If desired, garnish with fresh basil leaves and a drizzle of olive oil before serving.
