4 large bell peppers (any color you prefer)

1 cup quinoa (or brown rice, cooked)

1 cup black beans, rinsed and drained

1 cup corn (fresh, canned, or frozen)

1 ½ cups diced tomatoes (canned or fresh)

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or a Mexican blend)

¼ cup fresh cilantro or parsley, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outsides with olive oil and place them upright in a baking dish.

      Make the Filling:

        - In a large mixing bowl, combine the cooked quinoa (or brown rice), black beans, corn, diced tomatoes, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.

          - Stir in ½ cup of the shredded cheese until well mixed.

            Stuff the Peppers: Spoon the filling into each prepared bell pepper, pressing down gently to pack the filling. Leave a little space at the top for the cheese.

              Top with Cheese: Sprinkle the remaining cheese evenly on top of the stuffed peppers.

                Bake: Cover the baking dish loosely with foil and bake in the preheated oven for about 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                  Garnish and Serve: Once out of the oven, let the peppers cool for a few minutes. Garnish with fresh cilantro or parsley and serve with lime wedges on the side for a zesty finish.
