Ingredients
  

For the Waffle Batter:

1 ¾ cups all-purpose flour

1 tablespoon baking powder

1 teaspoon sugar

½ teaspoon salt

2 large eggs

1 ½ cups milk

⅓ cup vegetable oil or melted butter

For the Spinach and Cheese Filling:

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 clove garlic, minced

Salt and pepper to taste

½ teaspoon red pepper flakes (optional)

For Serving (optional):

Sour cream or Greek yogurt

Hot sauce or salsa

Instructions
 

Prepare the Spinach Filling:

    - In a medium skillet over medium heat, add a little olive oil. Once hot, add the minced garlic and sauté for 1 minute until fragrant.

      - Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

        - In a mixing bowl, combine the cooked spinach, ricotta cheese, mozzarella cheese, and Parmesan cheese. Season with salt, pepper, and red pepper flakes. Mix well and set aside.

          Make the Waffle Batter:

            - In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.

              - In another bowl, beat the eggs and then add the milk and vegetable oil or melted butter, mixing until well-combined.

                - Pour the wet ingredients into the dry ingredients and stir until just combined. The batter may be a little lumpy, which is fine; do not overmix.

                  Preheat the Waffle Iron:

                    - Preheat your waffle iron according to the manufacturer’s instructions. If it has a non-stick feature, you may not need additional oil or spray.

                      Assemble the Waffle Pockets:

                        - Once the waffle iron is ready, pour a ladleful of batter onto the center of the waffle iron (about half the amount you typically use).

                          - Add a generous spoonful of the spinach and cheese filling on top of the batter, spreading it evenly but leaving some space around the edges.

                            - Pour another ladleful of batter over the filling to cover it completely.

                              - Close the waffle iron carefully and cook according to your waffle iron’s instructions or about 5-7 minutes until golden brown and crispy.

                                Serve:

                                  - Carefully remove the waffle pockets from the iron and let them cool on a wire rack for a minute before serving.

                                    - Serve warm with a dollop of sour cream or Greek yogurt and drizzle with hot sauce or salsa if desired.
