Ingredients

4 large flour tortillas

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 garlic clove, minced

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper to taste

1 teaspoon red pepper flakes (optional, for a kick)

¼ cup chopped sun-dried tomatoes (optional)

Salsa or sour cream for serving (optional)

Instructions

Preheat the Skillet: Heat a large non-stick skillet or pan over medium heat.

Sauté the Spinach: In a separate saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds. Toss in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

Prepare the Cheese Mixture: In a mixing bowl, combine ricotta cheese, shredded mozzarella, grated Parmesan, dried oregano, salt, pepper, and red pepper flakes (if using). Stir in the sautéed spinach and sun-dried tomatoes (if desired). Mix until well combined.

Assemble the Tortillas: Lay a tortilla flat on a clean surface. Spoon a generous amount of the cheese and spinach mixture onto one half of the tortilla. Fold the other half over to create a half-moon shape. Repeat with the remaining tortillas and filling.

Cook the Tortilla Melts: Carefully place the stuffed tortilla into the preheated skillet. Cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted. You may need to press down slightly with a spatula to ensure even cooking.

Serve: Once cooked, remove from the skillet and slice into wedges. Serve warm with salsa or sour cream on the side for dipping.
