Cheesy Spinach Stuffed Shells

20 jumbo pasta shells

2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta Shells: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian seasoning, and a pinch of salt and pepper. Mix until well combined.

        Stuff the Shells: Take each cooked pasta shell and carefully stuff it with about 2 tablespoons of the cheese and spinach filling. Place the stuffed shells seam-side up in a large baking dish.

          Add Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring each shell is covered. Sprinkle the remaining 1/2 cup of mozzarella cheese on top.

            Bake: Drizzle with olive oil and cover the dish with aluminum foil. Bake in the preheated oven for about 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and slightly golden.

              Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh basil if desired, and serve warm.
