Cheesy Spinach and Mushroom Pasta Bake

8 oz (about 225g) penne pasta

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (button or cremini)

1 small onion, diced

2 cloves garlic, minced

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup parmesan cheese, grated

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

1/2 cup heavy cream (optional for creaminess)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and sauté until the mushrooms are tender, about 5-6 minutes. Stir in the chopped spinach and cook until wilted. Season with salt, pepper, oregano, and paprika.

        Prepare the Cheese Mixture: In a separate bowl, combine the ricotta cheese, half of the mozzarella, half of the parmesan, and heavy cream (if using). Mix until well blended. Season with a little salt and pepper.

          Combine Pasta and Vegetables: In a large mixing bowl, combine the cooked pasta with the sautéed spinach and mushroom mixture. Pour the cheese mixture over the pasta and gently stir until everything is evenly coated.

            Assemble the Bake: Transfer the pasta mixture into a greased 9x13-inch baking dish. Top with the remaining mozzarella and parmesan cheese.

              Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly and the top is golden brown.
