Cheesy Spinach and Chicken Quesadillas

2 cups cooked chicken, shredded

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 tablespoon olive oil

4 large flour tortillas

Salsa and sour cream for serving

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, chopped spinach, mozzarella, cheddar, cream cheese, garlic powder, onion powder, and black pepper. Mix well until all ingredients are evenly coated and distributed.

    Heat the Pan: In a large skillet, heat olive oil over medium heat. Once hot, you'll know it's ready when the oil shimmers.

      Assemble the Quesadillas: Place one tortilla in the heated skillet. Add a generous portion of the cheesy spinach and chicken mixture on half of the tortilla, then fold the other half over to create a half-moon shape.

        Cook: Cook for about 3-4 minutes on one side, or until the tortilla is golden brown and crispy. Flip carefully and cook for an additional 3-4 minutes on the other side until it is also golden and the cheese is melted.

          Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling.

            Slice and Serve: Cut each quesadilla into wedges and serve warm with salsa and sour cream on the side for dipping.
