Cheesy Spinach and Chicken Pasta Bake

Ingredients
  

2 cups pasta (penne or rigatoni)

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

3 cups fresh spinach (or 1 cup frozen, thawed and drained)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and add the pasta. Cook according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add Spinach: Stir in the fresh spinach and cook until wilted, about 2-3 minutes. If using frozen spinach, ensure it’s heated through and all moisture is evaporated.

        Mix the Cheeses: In a large mixing bowl, combine the cooked pasta, chicken and spinach mixture, ricotta cheese, half of the mozzarella, and half of the Parmesan cheese. Stir until everything is well mixed.

          Add Marinara Sauce: Pour in the marinara sauce and mix until all the pasta is well coated. Adjust seasoning if necessary.

            Assemble the Bake: Preheat your oven to 350°F (175°C). Transfer the pasta mixture to a greased 9x13 inch baking dish. Spread it evenly.

              Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the cheese is melted, bubbly, and slightly golden.

                  Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot and enjoy!
