2 pounds of russet potatoes, thinly sliced

2 cups of shredded sharp cheddar cheese

1 cup of grated Parmesan cheese

3 cups of heavy cream

4 tablespoons of unsalted butter

4 cloves of garlic, minced

1 medium onion, finely chopped

1 teaspoon of dried thyme

1 teaspoon of paprika

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter.

    Prepare the Potatoes: Peel and thinly slice the russet potatoes. A mandoline slicer works great for this step to ensure even slices.

      Cook the Aromatics: In a medium saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3-4 minutes.

        Make the Cream Mixture: Stir in the heavy cream, thyme, paprika, salt, and black pepper. Bring the mixture to a simmer and let it cook for another 2-3 minutes. Remove from heat.

          Layer the Dish: In the prepared baking dish, layer one-third of the sliced potatoes. Pour a third of the cream mixture over the potatoes, then sprinkle a quarter of the cheddar and Parmesan cheeses on top. Repeat this process two more times, finishing with a layer of cream and the remaining cheeses on top.

            Bake the Dish: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Then, remove the foil and bake for an additional 30-35 minutes, or until the potatoes are tender and the top is golden and bubbly.

              Garnish and Serve: Remove from the oven and let it rest for about 10 minutes. Garnish with fresh chopped parsley before serving.
