Cheesy Scalloped Potatoes

2 lbs Yukon Gold potatoes, thinly sliced (about 4-5 medium-sized)

2 cups heavy cream

1 cup whole milk

3 cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

4 cloves garlic, minced

1 large onion, thinly sliced

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

½ tsp paprika

½ tsp black pepper

½ tsp salt (or to taste)

4 tbsp unsalted butter

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Baking Dish: Grease a 9x13 inch baking dish with 1 tablespoon of butter. Set it aside.

      Sauté Aromatics: In a large skillet over medium heat, add the remaining butter. Once melted, add the sliced onions and minced garlic. Sauté until the onions become translucent and tender, about 5-7 minutes. Remove from heat.

        Mix Cream and Cheeses: In a mixing bowl, whisk together the heavy cream, whole milk, thyme, paprika, black pepper, and salt. Stir in 2 cups of the shredded cheddar and all of the Gruyère cheese until well combined.

          Layering the Potatoes: Arrange half of the sliced potatoes evenly in the prepared baking dish. Top with half of the sautéed onion and garlic mixture, then pour half of the cheese and cream mixture over the top. Repeat the layers with the remaining potatoes, onions, and cream mixture.

            Add Remaining Cheese: Sprinkle the remaining 1 cup of sharp cheddar cheese evenly over the top for a decadent finish.

              Bake: Cover the baking dish with aluminum foil and bake for 45 minutes. Then, remove the foil and continue to bake for another 30-40 minutes, or until the potatoes are tender and the top is golden and bubbly.

                Rest & Serve: Once baked, allow the cheesy scalloped potatoes to rest for about 10 minutes. Garnish with chopped fresh parsley before serving.
