1 lb breakfast sausage (mild or spicy, your choice)

8 large eggs

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/2 cup diced onion

1/4 cup milk

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

4 large flour tortillas

1/4 cup fresh cilantro, chopped (optional)

Salsa or hot sauce for serving (optional)

Instructions
 

Cook the Sausage: In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and cooked through, about 5-7 minutes. Use a slotted spoon to remove the sausage from the skillet and set aside, leaving the drippings in the pan.

    Sauté the Vegetables: In the same skillet, add the diced bell peppers and onions. Sauté for about 3-4 minutes, until softened. Remove from heat.

      Whisk the Eggs: In a large mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined.

        Cook the Eggs: Pour the egg mixture into the skillet over medium-low heat. Stir occasionally, cooking for about 5 minutes until the eggs are just set but still soft.

          Combine Ingredients: Add the cooked sausage, sautéed vegetables, and shredded cheddar cheese to the egg mixture. Stir gently until the cheese has melted and everything is combined.

            Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon a generous amount of the cheesy sausage egg mixture onto the center of the tortilla. Add chopped cilantro if desired. Fold in the sides and roll it up tightly to secure the filling.
