Ingredients

1 pound baby potatoes, halved

1 pound smoked sausage, sliced (your choice of kielbasa or andouille)

1 cup shredded cheddar cheese

1 cup ranch dressing

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and black pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Prepare the Potatoes: In a large mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, onion powder, paprika, salt, and black pepper until evenly coated.

Combine Ingredients: Add the sliced smoked sausage to the bowl and mix well to combine with the seasoned potatoes.

Bake: Spread the potato and sausage mixture evenly in a large baking dish. Bake in the preheated oven for about 25 minutes, or until the potatoes are tender and lightly golden.

Add Ranch and Cheese: Remove the dish from the oven and drizzle the ranch dressing evenly over the mixture. Sprinkle the shredded cheddar cheese on top.

Final Bake: Return the dish to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven, let cool for a few minutes, and then garnish with chopped fresh chives or parsley, if desired. Serve warm.
