Ingredients
  

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 tablespoon olive oil

1 packet ranch dressing mix (1 ounce)

1 cup cheddar cheese, shredded

1/2 cup cream cheese, softened

1/2 cup chicken broth

1 teaspoon garlic powder

Salt and pepper, to taste

Optional: sliced green onions for garnish

Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken pieces with salt, pepper, and garlic powder. Add the chicken to the skillet and cook until browned and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set aside.

    Cook the Broccoli: In the same skillet, add the broccoli florets. If using frozen broccoli, ensure it's thawed. Stir-fry for 3-4 minutes until they are tender but still bright green.

      Make the Sauce: Lower the heat and add the cream cheese and chicken broth to the skillet. Stir until the cream cheese has melted and is well combined with the broth.

        Add Flavor: Stir in the ranch dressing mix and mix thoroughly. Add the cooked chicken back to the skillet. Mix well to ensure the chicken is coated in the ranch sauce.

          Cheesy Finish: Sprinkle shredded cheddar cheese over the top. Cover the skillet with a lid and let it cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.

            Serve: Once the cheese is melted, remove from heat. Garnish with sliced green onions if desired, and serve hot. This dish pairs great with quinoa, rice, or just on its own!
