4 large flour tortillas

2 cups shredded cheddar cheese (or a blend of your favorites like Monterey Jack and Pepper Jack)

1 cup cooked chicken, shredded (optional for added protein)

1 medium bell pepper, thinly sliced

1 small red onion, thinly sliced

1 jalapeño, finely chopped (optional for a spicy kick)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Prepare the Filling: In a skillet over medium heat, add olive oil. Once hot, sauté the sliced bell pepper, red onion, and jalapeño for about 3-4 minutes, or until they start to soften. Add the shredded chicken (if using), garlic powder, cumin, salt, and pepper. Stir and cook for another 2-3 minutes until the mixture is heated through. Remove from heat and set aside.

    Assemble the Quesadillas: Lay a tortilla flat on a clean surface. Sprinkle a generous amount of shredded cheese on half of the tortilla, then add a portion of the sautéed filling over the cheese. Top with another layer of cheese for extra melty goodness. Fold the tortilla in half over the filling, pressing down gently to seal.

      Cook the Quesadillas: Heat a large skillet or griddle over medium heat. Place the folded quesadilla in the skillet (you may need to cook them in batches). Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted. Use a spatula to flip carefully.
