4 low-carb tortillas

1 cup shredded mozzarella cheese

1/2 cup pepperoni slices

1/4 cup pizza sauce (plus extra for dipping)

1/4 teaspoon garlic powder

1/4 teaspoon Italian seasoning

1/4 cup grated Parmesan cheese

Olive oil spray

Fresh basil (optional for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Tortillas: Place the low-carb tortillas on a clean surface. Sprinkle half of the mozzarella cheese evenly over each tortilla, making sure to leave a border around the edges.

      Add the Toppings: Layer pepperoni slices on top of the cheese. Drizzle approximately one tablespoon of pizza sauce over the pepperoni on each tortilla.

        Season It: Sprinkle garlic powder, Italian seasoning, and Parmesan cheese over the toppings for added flavor.

          Roll It Up: Starting from one edge, tightly roll each tortilla away from you to form a log. Make sure the fillings stay inside as you roll.

            Slice the Roll-Ups: Slice each rolled tortilla into 1-inch pieces, placing them cut side up on the prepared baking sheet.

              Bake: Lightly spray the tops of the roll-ups with olive oil spray. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and the edges are golden brown.

                Serve: Remove from the oven and let them cool for a couple of minutes. Serve warm with additional pizza sauce for dipping. Garnish with fresh basil if desired.
