Ingredients

2 cups mashed potatoes (leftover or freshly made)

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

1 large egg, beaten

1/4 cup green onions, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 cup breadcrumbs (for coating)

Cooking spray or oil (for greasing)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

Combine Ingredients: In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, cream cheese, beaten egg, green onions, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined and the mixture is smooth.

Form the Puffs: Using your hands or a cookie scoop, form small balls or puffs (about 1.5 inches in diameter) from the potato mixture and place them on the prepared baking sheet, leaving space between each puff.

Coat the Puffs: Roll each puff in breadcrumbs, ensuring they are evenly coated. This will give them a crispy exterior when baked.

Bake the Puffs: Once all the puffs are coated, spray the tops lightly with cooking spray to help them brown. Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.

Cool and Serve: Remove the potato puffs from the oven and let them cool for a few minutes. Serve warm as appetizers or snacks. For an extra kick, serve with a side of sour cream or your favorite dip!
