2 cups leftover mashed potatoes

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/4 cup chopped green onions (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 large egg

1/2 cup breadcrumbs (preferably panko)

Cooking spray or oil for greasing

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease the parchment with cooking spray or oil.

    In a large mixing bowl, combine the leftover mashed potatoes, sharp cheddar cheese, grated Parmesan, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are fully incorporated.

      Stir in the egg until the mixture is smooth and slightly sticky. This will help bind everything together.
