1 cup shredded sharp cheddar cheese

½ cup sour cream

½ cup cooked and crumbled bacon (about 6 slices)

¼ cup chopped green onions (scallions)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Scrub and wash the russet potatoes thoroughly. Pat them dry with a clean towel. Use a fork to poke several holes in each potato (this allows steam to escape during baking).

      Season the Potatoes: Rub the potatoes with olive oil, sprinkle with salt, and coat them evenly. Place the potatoes directly on the oven rack or on a baking sheet if you prefer.

        Bake: Bake for 45-60 minutes, or until the potatoes are tender and the skin is crisp. You can check doneness by inserting a fork or knife into the center of a potato; it should slide in easily.

          Prepare the Filling: While the potatoes are baking, mix the shredded cheddar cheese, sour cream, crumbled bacon, and chopped green onions in a mixing bowl. Add the garlic powder, onion powder, and season with salt and pepper to taste. Mix until well combined.

            Cool and Cut: Once the potatoes are cooked, remove them from the oven and let them cool for about 5 minutes. Carefully cut each potato in half lengthwise and gently scoop out a bit of the flesh to create space for the filling, leaving some potato around the edges for structure.
