6 large eggs

1/2 cup milk (or milk alternative)

1 cup shredded cheddar cheese

1 cup hatch green chiles, diced (fresh or canned)

1/2 cup cooked and crumbled breakfast sausage (optional)

1/4 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Cooking spray (for greasing the muffin tin)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or line with parchment paper cups.

    Prepare the Egg Mixture: In a large bowl, whisk together the eggs and milk until fully combined. Season with garlic powder, onion powder, salt, and pepper.

      Add the Cheesy Ingredients: Stir in the shredded cheddar cheese, diced hatch green chiles, and cooked breakfast sausage (if using). Mix well to ensure all ingredients are evenly distributed.

        Chop the Green Onions: Fold in the chopped green onions to the egg mixture, mixing gently to incorporate without over-mixing.

          Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full. This will allow them to rise while baking.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg is set and the tops are lightly golden.

              Cool & Serve: Remove from the oven and allow the muffin cups to cool for a few minutes. Carefully run a knife around the edges and remove the muffin cups from the tin. Enjoy warm or at room temperature!
