Cheesy Hatch Chili Chicken Quesadillas

2 cups cooked chicken, shredded (grilled or rotisserie)

1 cup shredded pepper jack cheese

1 cup shredded sharp cheddar cheese

1 cup roasted Hatch green chiles, chopped (fresh or canned)

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

4 large flour tortillas

2 tablespoons olive oil (or butter for frying)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Prepare the Filling: In a medium bowl, combine the shredded chicken, pepper jack cheese, cheddar cheese, roasted Hatch chiles, chopped onion, minced garlic, cumin, smoked paprika, salt, and black pepper. Mix well until all ingredients are evenly coated.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble Quesadillas: Place one tortilla in the skillet and spread a generous portion of the chicken and cheese mixture on half of the tortilla. Fold the tortilla in half to cover the filling.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side, or until the tortilla is golden and crispy. Carefully flip the quesadilla and add the remaining tablespoon of olive oil to the skillet. Cook for another 3-4 minutes until the second side is golden and the cheese has melted.

          Repeat: Remove the quesadilla from the skillet and let it cool for a minute before cutting into wedges. Repeat the process for the remaining tortillas and filling.

            Serve: Arrange the quesadilla wedges on a serving platter, garnish with chopped cilantro, and serve with sour cream and salsa on the side.
