Cheesy Hatch Chili Chicken Bake

4 boneless, skinless chicken breasts

2 cups hatch green chilies, diced (fresh or canned)

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, for garnish

1 cup crushed tortilla chips (optional, for topping)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken: Season the chicken breasts with garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Place them in a greased 9x13 inch baking dish.

      Make Sauce: In a mixing bowl, combine the diced hatch chilies, sour cream, cream cheese, half of the cheddar cheese, and half of the Monterey Jack cheese. Mix until well blended.

        Assemble the Bake: Pour the creamy chili mixture evenly over the seasoned chicken breasts. Make sure to cover the chicken fully with the mixture.

          Top with Cheese: Sprinkle the remaining cheddar and Monterey Jack cheeses on top of the dish. If desired, add the crushed tortilla chips for an extra crunch.
