Ingredients

1 (30 oz) bag frozen hashbrown potatoes

2 cups cooked rotisserie chicken, shredded

2 cups shredded cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of chicken soup

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ cup green onions, chopped (for garnish)

½ cup panko breadcrumbs (optional for topping)

2 tablespoons butter, melted (if using breadcrumbs)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a little butter.

Mix the Base: In a large mixing bowl, combine the sour cream, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir until smooth and well-combined.

Combine Ingredients: Add the frozen hashbrowns and shredded rotisserie chicken into the mixture. Fold in 1½ cups of the shredded cheddar cheese. Stir gently until everything is evenly coated.

Transfer to Baking Dish: Pour the hashbrown mixture into the prepared baking dish, spreading it evenly.

Add Cheese Topping: Sprinkle the remaining ½ cup of cheddar cheese over the top of the casserole.

Prepare Breadcrumbs (Optional): If using panko breadcrumbs, mix with melted butter in a small bowl. Evenly sprinkle the breadcrumb mixture over the cheese for added crunch.

Bake: Place the casserole in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the casserole is bubbly.

Garnish and Serve: Once done, remove from the oven and let it cool for about 5 minutes. Garnish with chopped green onions before serving.
