2 boneless, skinless chicken breasts

4 slices of thick-cut sourdough bread

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

4 tablespoons unsalted butter, softened

4 cloves garlic, minced

1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)

Salt and pepper, to taste

1 teaspoon paprika (optional)

½ teaspoon red pepper flake (optional, for heat)

Fresh spinach or arugula (optional, for garnish)

Cooking spray or olive oil, for grilling

Prepare the Chicken: Season the chicken breasts with salt, pepper, and paprika (if using). Heat a skillet over medium-high heat with a drizzle of olive oil. Cook the chicken for about 6-7 minutes on each side, or until fully cooked and the juices run clear. Remove from heat and let it rest for a few minutes before slicing it into thin strips.

    Make the Garlic Butter: In a small bowl, mix the softened butter, minced garlic, dried parsley, and red pepper flakes (if using) until well-combined. Set aside.

      Assemble the Sandwich:

        - Spread a generous layer of the garlic butter mixture on one side of each slice of sourdough bread.

          - Place two slices of bread, butter-side down, in a preheated skillet or grill pan.
