Cheesy Chicken Enchiladas in Under 30 Minutes

2 cups cooked shredded chicken (store-bought rotisserie chicken works great)

1 cup shredded cheese (cheddar or Mexican blend)

1 cup enchilada sauce (canned or homemade)

8 small flour or corn tortillas

1 cup black beans, drained and rinsed (optional)

1/2 cup corn (canned or frozen, optional)

1 tsp ground cumin

1 tsp chili powder

1/2 tsp garlic powder

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Filling: In a mixing bowl, combine the shredded chicken with half of the shredded cheese, 1/2 cup of the enchilada sauce, cumin, chili powder, and garlic powder. If using black beans and corn, fold those in gently as well.

      Assemble the Enchiladas: On a flat surface, take one tortilla and spoon a generous amount of the chicken filling into the center. Roll it tightly and place it seam-side down in a greased 9x13 inch baking dish. Repeat with the remaining tortillas and filling.

        Add Sauce and Cheese: Once all enchiladas are in the dish, pour the remaining enchilada sauce evenly over the top. Sprinkle the rest of the shredded cheese on top of the sauce.

          Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and lightly golden.

            Serve: Remove from the oven and let cool for a minute. Garnish with chopped cilantro if desired. Serve hot with a dollop of sour cream.
