1 large head of cauliflower, cut into florets

1 cup shredded sharp cheddar cheese

½ cup cream cheese, softened

½ cup sour cream

¼ cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

½ teaspoon onion powder

½ teaspoon garlic powder

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Steam the Cauliflower: In a large pot, bring a few inches of water to a boil. Place the cauliflower florets in a steamer basket and steam until tender, about 8-10 minutes. Alternatively, you can microwave the cauliflower in a covered bowl with a little water for about 5-7 minutes.

      Prepare the Mash: Once cooked, transfer the steamed cauliflower to a mixing bowl or a food processor. Add the butter, cream cheese, sour cream, minced garlic, onion powder, garlic powder, salt, and pepper. Blend or mash until smooth and creamy.

        Cheese It Up: Stir in the shredded cheddar cheese and half of the grated Parmesan cheese until well combined.

          Transfer to Baking Dish: Pour the cheesy cauliflower mash into a greased baking dish, spreading it out evenly. Sprinkle the remaining Parmesan cheese on top for a golden crust.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is bubbly and slightly golden.

              Garnish and Serve: Remove from the oven and let it cool for a few minutes. Top with freshly chopped chives or parsley for added flavor and colour before serving.
