Cheesy Broccoli Rice Casserole

2 cups uncooked white or brown rice

4 cups broccoli florets (fresh or frozen)

2 cups shredded sharp cheddar cheese

1 cup cream of mushroom soup (or a homemade version)

1 cup vegetable or chicken broth

1/2 cup milk (whole or low-fat)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon olive oil

1/2 teaspoon paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons butter (optional, for breadcrumb topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook Rice: In a medium-sized pot, cook your rice according to package instructions (usually about 15-20 minutes). If using brown rice, it will take longer – about 40-45 minutes.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

        Prepare Broccoli: If using fresh broccoli, steam or lightly boil the florets for about 3-5 minutes until tender but still bright green. If using frozen broccoli, simply thaw in the microwave.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed onions and garlic, broccoli florets, cream of mushroom soup, vegetable or chicken broth, milk, paprika, black pepper, and salt. Mix well until all ingredients are evenly combined.

            Add Cheese: Gently fold in 1 1/2 cups of the shredded cheese into the rice and broccoli mixture until well incorporated.

              Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, smoothing it out evenly.

                Top with Cheese: Sprinkle the remaining 1/2 cup of cheese evenly over the top.

                  Prepare Breadcrumb Topping (Optional): In a small bowl, melt the butter. Combine with breadcrumbs and mix until they are well coated. Sprinkle the breadcrumb mixture over the cheese layer for added crunch.

                    Bake: Place the casserole in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and the top is golden brown.
