2 cups cooked chicken, shredded or diced

2 cups cooked white or brown rice

2 cups fresh broccoli florets (or frozen, thawed)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 ½ cups shredded cheddar cheese (divided)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

1 cup breadcrumbs (optional, for topping)

1 tablespoon olive oil (if using breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Vegetables: If using fresh broccoli, blanch the florets in boiling water for about 2 minutes, then drain and set aside. If using frozen broccoli, ensure it is fully thawed and any excess water is squeezed out.

      Mix the Base: In a large mixing bowl, combine the shredded chicken, cooked rice, broccoli, cream of chicken soup, sour cream, 1 cup of cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

          Prepare the Topping: (Optional) If you want a crunchy topping, mix the breadcrumbs with olive oil in a small bowl until they are lightly coated. Sprinkle the mixture over the casserole.

            Add Cheese Topping: Sprinkle the remaining ½ cup of shredded cheddar cheese evenly over the top of the casserole.

              Bake: Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the casserole is hot and bubbly, and the cheese is melted and slightly golden on top.
