2 cups broccoli florets (fresh or frozen)

1 cup long-grain white rice (uncooked)

3 cups vegetable or chicken broth

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/2 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon salt

1/2 cup breadcrumbs (optional, for topping)

1 tablespoon olive oil (optional, for topping)

Preparation of Ingredients: Preheat your oven to 350°F (175°C). If using fresh broccoli, steam or blanch it for 3-4 minutes until bright green and slightly tender. Drain and set aside.

    Cooking Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and 3 cups of broth. Bring it to a boil, then cover and reduce heat to low. Let it simmer for 15 minutes or until the rice is fully cooked and all the liquid has been absorbed.

      Combine Ingredients: In a large bowl, combine the cooked rice, broccoli, cream cheese, sour cream, garlic powder, onion powder, black pepper, and salt. Mix well until all ingredients are thoroughly combined.

        Cheese Love: Stir in the shredded sharp cheddar and mozzarella cheese (reserve a handful for topping if desired).
