Cheesy Broccoli and Chicken Casserole

2 cups cooked chicken, shredded or diced

4 cups fresh broccoli florets (or frozen, thawed)

2 cups cooked rice (white or brown)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 can (10.5 oz) cream of chicken soup

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

2 tablespoons butter, melted (optional for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam it for about 5-7 minutes until tender but still bright green. For frozen broccoli, simply thaw and drain well to remove excess moisture.

      Mix the Ingredients: In a large mixing bowl, combine the cooked chicken, broccoli florets, cooked rice, 1/2 cup of cheddar cheese, 1/2 cup of mozzarella cheese, cream of chicken soup, milk, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are evenly combined.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch baking dish, spreading it out evenly.

          Add Cheese Topping: Sprinkle the remaining cheddar and mozzarella cheese over the top of the casserole.

            Breadcrumb Topping (Optional): If you like a crunchy topping, mix the breadcrumbs with melted butter and sprinkle it evenly over the cheese layer.

              Bake the Casserole: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown on top.
