2 cups cooked chicken, shredded or cubed

4 cups fresh broccoli florets

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cooked rice (white or brown)

1/2 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 teaspoon paprika (optional, for color)

1 cup crushed crackers (like Ritz or butter crackers)

2 tablespoons olive oil or melted butter

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Blanch Broccoli: In a large pot of boiling water, blanch the broccoli florets for about 2-3 minutes until they turn bright green. Drain and immediately transfer to an ice bath to stop cooking. Drain again and set aside.

      Mix Ingredients: In a large mixing bowl, combine the cooked chicken, blanched broccoli, cream of chicken soup, sour cream, 1 cup shredded cheddar cheese, cooked rice, milk, garlic powder, onion powder, black pepper, and salt. If desired, add paprika for extra flavor. Mix until well combined.

        Prepare Casserole Dish: Lightly grease a 9x13 inch baking dish with olive oil or melted butter. Pour the mixture into the dish, spreading it out evenly.

          Top with Crackers: In a small bowl, combine the crushed crackers with a tablespoon of melted butter or olive oil (this helps the topping to brown). Sprinkle the cracker mixture evenly over the casserole.

            Add Extra Cheese: Sprinkle the remaining shredded cheddar cheese on top of the cracker layer for an extra cheesy finish.
