Ingredients
  

For the crust:

1 ¾ cups chocolate cookie crumbs (like Oreo)

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake filling:

24 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

8 oz Godiva chocolate, melted and slightly cooled

1 cup sour cream

For the chocolate ganache topping:

8 oz Godiva chocolate, chopped

½ cup heavy cream

Whipped cream for garnish (optional)

Chocolate shavings for garnish (optional)

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, combine chocolate cookie crumbs, melted butter, and sugar until well mixed.

        - Press the mixture into the bottom of a 9-inch springform pan evenly. Bake for 10 minutes. Remove from oven and cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy, about 2-3 minutes.

              - Add vanilla extract and combine well.

                - Add the eggs one at a time, beating well after each addition.

                  - Pour in the melted Godiva chocolate and mix until fully incorporated.

                    - Finally, fold in the sour cream until just combined.

                      Assemble and bake:

                        - Pour the cheesecake filling over the cooled crust, making sure to spread it evenly.

                          - Bake in the preheated oven for 55-65 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool inside for 1 hour.

                            Prepare the chocolate ganache:

                              - In a small saucepan, heat the heavy cream over medium heat until just below boiling.

                                - Remove from heat and add the chopped Godiva chocolate. Let sit for a minute, then stir until smooth and glossy.

                                  Cool the cheesecake:

                                    - Remove the cheesecake from the oven and allow it to cool to room temperature.

                                      - Once cooled, spread the chocolate ganache over the top. Cover with plastic wrap and refrigerate for at least 4 hours or overnight for best results.

                                        Serve:

                                          - Before serving, decorate with whipped cream and chocolate shavings if desired. Carefully remove the sides of the springform pan, slice, and enjoy!
