12 fresh jalapeno peppers

8 oz cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/4 cup finely chopped green onions

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

1/2 cup cooked bacon, crumbled (optional)

Olive oil (for drizzling)

Fresh cilantro (for garnish, optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Carefully slice each jalapeno in half lengthwise, and use a spoon to remove the seeds and membranes (for less heat, remove all seeds; for more heat, leave some in).

      In a mixing bowl, combine the softened cream cheese, cheddar cheese, mozzarella cheese, green onions, garlic powder, smoked paprika, salt, and pepper. If you’re using bacon, fold it into the cheese mixture.

        Using a small spoon or a piping bag, fill each jalapeno half with the cheese mixture, pressing gently to ensure the filling adheres.

          Place the stuffed jalapenos on a baking sheet lined with parchment paper. Drizzle lightly with olive oil for extra flavor and crispiness.

            Bake in the preheated oven for 20–25 minutes, until the jalapenos are tender, and the cheese is bubbly and slightly golden.

              Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired before serving.
