Cheddar Sweet Potato Egg Bites

Ingredients
  

1 large sweet potato (about 250g), peeled and diced

1 cup shredded sharp cheddar cheese

4 large eggs

1/4 cup milk (or milk alternative)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and black pepper to taste

1 tablespoon olive oil (for greasing)

Fresh chives or parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil to prevent sticking.

    Cook the Sweet Potato: In a medium saucepan, boil the diced sweet potato in salted water for about 10-15 minutes until tender. Drain and let cool slightly.

      Blend the Mixture: In a blending bowl or food processor, add the cooked sweet potato, eggs, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Blend until smooth and creamy.

        Add Cheese: Fold in the shredded cheddar cheese into the sweet potato mixture until evenly distributed.

          Pour into Muffin Tin: Carefully pour the mixture into the greased muffin tin, filling each cavity about 3/4 full.

            Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are puffed and lightly golden on top.

              Cool and Serve: Remove from the oven and let cool for 5 minutes. Gently run a knife around the edges of each bite and carefully pop them out of the muffin tin. Serve warm, garnished with fresh chives or parsley if desired.
