Cheddar Jalapeño Corn Fritters

1 cup corn kernels (fresh, frozen, or canned)

1 cup all-purpose flour

1/2 cup sharp cheddar cheese, shredded

2 jalapeños, finely diced (seeds removed for less heat)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg, lightly beaten

1/2 cup buttermilk (or milk with 1/2 teaspoon vinegar)

2 tablespoons fresh cilantro or parsley, chopped (optional)

Prepare the Ingredients: If using fresh corn, cut the kernels off the cob. If using frozen, thaw and drain excess water. If using canned, drain them thoroughly.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and black pepper. Whisk together until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the egg and buttermilk until smooth. If using, mix in the chopped cilantro or parsley.

        Combine Everything: Pour the wet ingredients into the dry mixture and stir until just combined. Do not over-mix. Gently fold in the corn kernels, cheddar cheese, and diced jalapeños until evenly distributed.

          Heat the Oil: In a large skillet, pour in about 1/4 inch of vegetable oil and heat over medium heat until hot (around 350°F or 175°C).
