Cheddar Hatch Chili Pull-Apart Muffins

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 cup shredded sharp cheddar cheese

1 cup chopped roasted hatch green chiles (fresh or canned)

1/4 cup fresh chopped cilantro

1/4 cup butter, melted

1 cup buttermilk

2 large eggs

1 tablespoon honey (optional, for a hint of sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a standard muffin tin or line it with paper liners for easy removal.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and smoked paprika until well combined.

      Add Cheese and Chiles: Stir in the shredded cheddar cheese, chopped hatch chiles, and fresh cilantro until the cheese and chiles are evenly distributed throughout the flour mixture.

        Combine Wet Ingredients: In another bowl, whisk together the melted butter, buttermilk, eggs, and honey (if using) until fully blended.

          Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
