Charcuterie Board Fried Rice

3 cups cooked jasmine rice (preferably day-old)

1 cup diced salami

1 cup diced prosciutto

1/2 cup sliced pepperoni

1/2 cup sharp cheddar cheese, shredded

1/2 cup brie cheese, cubed

1/2 cup sliced black olives

1/2 cup diced bell peppers (red and yellow for color)

1/2 cup green onions, chopped

2 large eggs

3 tablespoons soy sauce

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon black pepper

Fresh parsley, for garnish

Prepare the Rice: If you don’t have day-old rice, cook jasmine rice according to package directions, spread it on a baking sheet, and refrigerate for at least 30 minutes to cool and firm up.

    Cook the Eggs: In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Scramble until just set, then remove from the skillet and set aside.

      Sauté the Meats and Vegetables: In the same skillet, add the remaining 2 tablespoons of olive oil. Add the diced salami, prosciutto, and pepperoni. Sauté for 3-4 minutes until slightly crispy. Add the diced bell peppers and black olives, cooking for an additional 2-3 minutes until the peppers are tender.

        Combine with Rice: Increase the heat to medium-high and add the cooked rice to the skillet. Stir-fry for about 5 minutes, allowing the rice to fry and brown slightly.

          Season the Fried Rice: Add the scrambled eggs back to the skillet along with the soy sauce, Dijon mustard, garlic powder, and black pepper. Mix well to combine all the ingredients thoroughly. Cook for another 2 minutes to warm everything through.

            Finishing Touches: Remove from heat and gently fold in the shredded cheddar and cubed brie while the rice is still hot, allowing the cheeses to melt slightly. Stir in the chopped green onions.

              Garnish and Serve: Transfer the fried rice to a large serving platter, sprinkle with fresh parsley for a pop of color, and serve warm.
