1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/2 cup vegetable oil

1/2 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 tsp vanilla extract

1 1/2 cups grated carrots

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans (optional)

For the Cheesecake Layer:

16 oz cream cheese, softened

1/2 cup granulated sugar

1/2 tsp vanilla extract

2 large eggs

1 cup sour cream

1 tsp lemon juice

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 1/2 cups powdered sugar

1/2 tsp vanilla extract

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and set aside.

    Make the Carrot Cake Layer:

      - In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

        - In a separate mixing bowl, beat together vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.

          - Gradually add the dry ingredients to the wet mixture, mixing until just combined.

            - Fold in the grated carrots, crushed pineapple, and nuts (if using).

              - Pour the batter into the prepared springform pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let it cool completely in the pan.

                Prepare the Cheesecake Layer:

                  - In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth.

                    - Add the vanilla extract and mix well. Incorporate the eggs one at a time, mixing on low speed until just combined.

                      - Finally, mix in the sour cream and lemon juice until smooth and creamy.
