2 lbs beef chuck or tail, cut into bite-sized cubes

4 medium potatoes, peeled and diced into large chunks

1 large onion, chopped

3 cloves garlic, minced

2 medium tomatoes, diced

1 bell pepper (any color), chopped

2 cups beef broth

1 tablespoon tomato paste

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon dried oregano

2 bay leaves

Salt and pepper to taste

2 tablespoons vegetable oil

Fresh cilantro for garnish (optional)

Brown the Meat: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes in batches, making sure not to overcrowd the pot. Season with salt and pepper, and sear until browned on all sides. Remove the meat and set aside.

    Sauté the Vegetables: In the same pot, add the chopped onions and bell pepper. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: Return the browned beef to the pot. Stir in the diced tomatoes, tomato paste, cumin, paprika, oregano, and bay leaves. Mix well to combine all flavors.

        Add Broth and Simmer: Pour in the beef broth, making sure the meat is submerged. Bring to a boil, then reduce the heat to low, cover, and let it simmer for about 1 hour, or until the beef is tender.

          Add Potatoes: After 1 hour, add the diced potatoes to the pot. Stir gently to combine and cover. Continue to simmer for an additional 30-40 minutes, or until the potatoes are cooked through.

            Adjust Seasoning: Taste and adjust seasoning with salt and pepper as needed. Remove bay leaves before serving.
