1 sheet puff pastry (thawed)

3 large onions (red or yellow), thinly sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon balsamic vinegar

Salt & pepper to taste

4 ounces soft goat cheese, crumbled

1/2 cup shredded mozzarella cheese

1 egg (for egg wash)

Fresh parsley (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Caramelize Onions: In a large skillet, heat the olive oil and butter over medium-low heat. Add the sliced onions and cook slowly, stirring occasionally for about 20-25 minutes, until the onions are golden brown and caramelized.

      Add Flavor: Stir in the balsamic vinegar, thyme, and season with salt and pepper. Cook for an additional 2 minutes, then remove from heat and set aside to cool slightly.
