Once your dough has risen and is ready to go, it’s time to roll it out into perfect flatbreads. Begin by lightly flouring your work surface to prevent sticking. Take a portion of the dough and gently punch it down to release any air bubbles. Divide the dough into equal pieces, typically about the size of a golf ball.

Ingredients

2 large onions, thinly sliced

2 tablespoons olive oil

1 teaspoon sugar

1/2 teaspoon salt

1 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1 teaspoon oregano

1 package (14 oz) store-bought pizza dough (or homemade if preferred)

Flour for dusting

1 egg, beaten (for egg wash)

Freshly cracked black pepper, to taste

Instructions

Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sprinkle with salt. Sauté for about 15 minutes, stirring occasionally until the onions are soft and lightly golden. Add the sugar midway through to enhance the caramelization. Continue cooking for another 10–15 minutes, until they are deep brown and sweet. Remove from heat and let cool slightly.

Prepare the Filling: In a mixing bowl, combine the caramelized onions, crumbled feta cheese, chopped parsley, oregano, and black pepper. Mix well until all ingredients are evenly distributed.

Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Roll Out the Dough: Turn the pizza dough onto a lightly floured surface. Divide it into 6 equal pieces. Roll each piece into a circle, about 6 inches in diameter.

Stuff the Flatbreads: Spoon a generous amount of the onion and feta filling onto one half of each dough circle. Fold the other half over to create a crescent shape, sealing the edges by pressing them together with your fingers or a fork.

Egg Wash: Place the stuffed flatbreads onto the prepared baking sheet. Brush the tops lightly with the beaten egg for a golden finish.

Bake: Bake in the preheated oven for 15–20 minutes or until the flatbreads are golden brown and crispy.

Serve and Enjoy: Remove from the oven and let cool for a few minutes. Serve warm, garnished with additional parsley if desired.
