4 slices of thick brioche or challah bread

2 large eggs

1/2 cup milk (whole or almond milk for a dairy-free option)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon granulated sugar

2 ripe bananas, sliced

2 tablespoons unsalted butter (or coconut oil for a vegan option)

Maple syrup, for serving

Optional toppings: whipped cream, toasted nuts, or powdered sugar

Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and granulated sugar until well combined and slightly frothy.

    Soak the Bread: Dip each slice of brioche or challah bread into the egg mixture, allowing it to absorb the liquid for about 30 seconds on each side. Ensure each slice is well-coated but not overly soggy.

      Caramelize the Bananas: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the sliced bananas and sauté for about 2-3 minutes, until they start to soften. Carefully sprinkle a little sugar on top and cook for an additional 2 minutes until the bananas caramelize and turn golden. Once done, remove them from the pan and set aside.

        Cook the French Toast: In the same skillet, add the remaining tablespoon of butter. Once melted, place the soaked bread slices onto the skillet. Cook for about 3-4 minutes per side, or until golden brown and slightly crispy. You may need to do this in batches to avoid overcrowding.
