Ingredients

4 slices of thick brioche or challah bread

2 ripe bananas, sliced

2 large eggs

1/2 cup milk (whole or almond)

1 tsp vanilla extract

1 tsp ground cinnamon

2 tbsp unsalted butter

3 tbsp brown sugar

Pinch of salt

Maple syrup, for serving

Optional: chopped nuts for garnish (walnuts or pecans)

Instructions

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined. Set aside.

Caramelize the Bananas: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced bananas and sprinkle the brown sugar over them. Cook for 2-3 minutes, gently stirring until the bananas are soft and caramelized. Remove from the skillet and set aside.

Cook the French Toast: In the same skillet, melt another tablespoon of butter. Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds on each side. Place the soaked bread slices into the skillet, cooking for 2-3 minutes on each side until golden brown and crisp.

Assemble: Once all the French toast slices are cooked, layer the caramelized bananas over each slice and drizzle with maple syrup. Optionally, sprinkle with chopped nuts for added crunch.

Serve: Arrange the French toast on plates and serve hot with extra syrup on the side.
