Ingredients

For the Pancakes:

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

For the Caramelized Banana Foster Topping:

2 ripe bananas, sliced

1/4 cup brown sugar

2 tablespoons unsalted butter

1/4 teaspoon cinnamon

1/4 cup dark rum (optional, can be substituted with more butter)

1 teaspoon vanilla extract

Whipped cream for serving (optional)

Chopped pecans or walnuts for garnish (optional)

Instructions

Prepare the Pancake Batter:

    - In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.

      - In another bowl, combine the milk, egg, melted butter, and vanilla extract.

        - Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid over-mixing; some lumps are okay.

          Cook the Pancakes:

            - Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or non-stick spray.

              - Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface.

                - Flip the pancakes and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter.

Make the Caramelized Banana Foster Topping:

                    - In a saucepan over medium heat, melt the butter. Add the brown sugar and cinnamon, stirring until combined and bubbling.

                      - Carefully add the sliced bananas and cook for about 2-3 minutes, gently stirring until they are coated and starting to caramelize.

                        - If using dark rum, carefully pour it into the pan. Allow the mixture to bubble for a minute before removing it from heat. If skipping the rum, just add the additional teaspoon of vanilla extract.

                          Serve the Pancakes:

                            - Stack the pancakes on plates and generously spoon the caramelized banana topping over them.

                              - Add whipped cream and nuts if desired for extra texture and flavor.

                                Enjoy!

                                  - Dig into your delicious Caramelized Banana Foster Pancakes while they're warm!
