2 ripe peaches, pitted and sliced

1/4 cup unsalted butter

1/2 cup brown sugar

1 teaspoon ground cinnamon

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

1 teaspoon vanilla extract

Extra butter or oil for cooking

Prepare the Caramel Topping: In a skillet over medium heat, melt the 1/4 cup of unsalted butter.

    Add the brown sugar and ground cinnamon, stirring until it dissolves and bubbles slightly.

      Arrange the sliced peaches in the skillet in a circular pattern, cooking them for 2-3 minutes until they start to soften. Remove from heat and set aside.

        Make the Pancake Batter: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

          In a separate bowl, combine the buttermilk, egg, and vanilla extract.

            Pour the wet ingredients into the dry ingredients and mix until just combined; don’t over-mix as the batter should be a bit lumpy.

              Cooking the Pancakes: Heat a non-stick skillet or griddle over medium heat, and grease it lightly with butter or oil.

                Pour about 1/3 cup of the pancake batter over the arranged peaches in the skillet.

                  Cook for 3-4 minutes until bubbles form on the surface, then carefully flip the pancake using a spatula and cook for an additional 2-3 minutes until golden brown.

                    Repeat with the remaining batter and caramelized peaches, adding more butter or oil to the skillet as necessary.

                      Serving: Serve the pancakes warm, drizzled with any remaining caramel sauce from the skillet, and top with whipped cream or vanilla ice cream if desired.
