Ingredients

4 ripe heirloom tomatoes (or your choice of fresh tomatoes)

8 oz fresh mozzarella cheese, sliced

Fresh basil leaves (about 10-15 leaves)

1/4 cup extra virgin olive oil

1/4 cup balsamic vinegar

1 tablespoon honey or maple syrup (optional, for sweetness)

Salt and freshly cracked black pepper, to taste

Pinch of red pepper flakes (optional, for a kick)

Instructions

Prepare the Balsamic Glaze: In a small saucepan over medium heat, combine balsamic vinegar and honey (if using). Bring to a gentle simmer and reduce heat to low, allowing it to simmer until thickened, about 10-15 minutes. Remove from heat and let cool.

Slice the Tomatoes and Mozzarella: While the glaze is simmering, wash and slice the heirloom tomatoes into 1/4-inch thick slices. Do the same with the mozzarella.

Assemble the Salad: On a large serving platter, alternate slices of tomato and mozzarella, slightly overlapping them in a circular or straight pattern.

Add the Basil: Tuck fresh basil leaves in between the tomato and mozzarella slices for an aromatic touch.

Drizzle with Olive Oil: Generously drizzle the extra virgin olive oil over the assembled salad.

Season: Sprinkle salt, black pepper, and red pepper flakes (if using) over the top of the salad for added flavor.

Finish with Balsamic Glaze: Finally, drizzle the cooled balsamic glaze over the entire salad for a beautiful finish.

Serve and Enjoy: This salad is best served fresh. Enjoy as a light appetizer or side dish!
