2 ripe avocados

1 lb (450g) shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 teaspoon minced garlic

1/4 cup diced red bell pepper

1/4 cup diced celery

1/4 cup diced red onion

1/4 cup chopped fresh parsley

2 tablespoons lime juice

Salt and pepper to taste

Lime wedges, for serving

Prep the Shrimp: In a medium bowl, toss the peeled and deveined shrimp with the Cajun seasoning, olive oil, and minced garlic until well-coated.

    Cook the Shrimp: Heat a large skillet over medium heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove from heat and let cool slightly.

      Prepare the Avocados: While the shrimp are cooling, cut the avocados in half and remove the pit. Scoop out a small portion of the avocado flesh to make room for the filling, being careful not to damage the skin.

        Make the Filling: In a mixing bowl, combine the cooked shrimp, diced red bell pepper, celery, red onion, chopped parsley, lime juice, salt, and pepper. Mix well until all ingredients are evenly distributed.
