1 lb Cajun sausage (such as andouille), sliced

1 cup long-grain rice, rinsed

1 medium onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes with green chiles, undrained

2 cups chicken broth

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

½ cup frozen peas

2 green onions, sliced (for garnish)

2 tablespoons olive oil

Salt and pepper to taste

Heat the Oil: In a large skillet, heat the olive oil over medium-high heat. Add the sliced Cajun sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set it aside.

    Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 4-5 minutes until they begin to soften. Then add the minced garlic and cook for another minute, stirring frequently.

      Add Rice and Spices: Stir in the rinsed rice, Cajun seasoning, smoked paprika, cayenne pepper, and season with salt and pepper. Cook for 2-3 minutes, stirring constantly until the rice is well-coated and slightly toasted.

        Combine Ingredients: Pour in the diced tomatoes with their juices and the chicken broth. Stir everything together and bring to a boil.

          Simmer: Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice has absorbed the liquid and is tender.

            Add Peas and Sausage: Remove the lid, and fluff the rice with a fork. Stir in the frozen peas and the browned sausage, cooking for an additional 5 minutes until the peas are heated through.
